Modo de preparo

    Aqueça o leite levemente e dissolva nele o fermento e o açúcar. Deixe descansar por cerca de 10 minutos, até formar uma espuminha.

    Em uma tigela grande, misture a farinha, o sal, a baunilha, o ovo, a manteiga e a mistura de fermento. Sove por cerca de 8-10 minutos, até a massa ficar lisa e macia.

    Divida a massa em duas partes iguais (pese para ficar mais preciso). Sove o cacau em pó (e 1 tsp de leite, se precisar) em uma das metades até ficar escura por igual.

    Coloque cada massa em uma tigela separada, cubra e deixe crescer por cerca de 1 hora, ou até dobrar de volume.

    Abra a massa de baunilha com o rolo em uma superfície levemente enfarinhada, formando um retângulo (aprox. 25 × 30 cm). Abra a massa de chocolate no mesmo tamanho e coloque delicadamente sobre a massa de baunilha. Pressione de leve e passe o rolo mais uma vez para as duas camadas grudarem.

    Corte a massa no sentido do comprimento em tiras de cerca de 5 cm de largura. Faça dois cortes pequenos do centro para fora (sem cortar até o fim!) e enrole com cuidado, para o desenho das camadas continuar aparecendo.

    Coloque os brioches em uma assadeira forrada com papel-manteiga, cubra e deixe descansar por mais 20-30 minutos.

    Pincele levemente com leite.

    Asse em forno preaquecido a 180 °C (calor em cima e embaixo) por 15-18 minutos, até dourar.

    Depois de assar, pincele com manteiga amolecida, deixe esfriar completamente e polvilhe bastante açúcar de confeiteiro. Macios, perfumados e lindamente bicolores.
