Modo de preparo

    Misture a farinha, a avelã moída, o açúcar de confeiteiro e o sal. Incorpore a manteiga gelada com as pontas dos dedos até formar uma farofa fina.

    Junte a gema e 1 tbsp de água gelada e sove rapidamente até obter uma massa lisa (use a segunda colher de água só se precisar). Modele um disco achatado, embrulhe em filme plástico e leve à geladeira por pelo menos 30 minutos.
