Bereiding

    Zeef de bloem in een kom en maak een kuiltje in het midden. Doe de gist met 1 tsp suiker en een scheutje melk in het kuiltje, roer het licht door en laat het 10 minuten staan. Voeg dan de rest van de suiker, het zout, de boter, het ei en de resterende melk toe. Kneed alles in ongeveer 8-10 minuten tot een soepel deeg.

    Dek het deeg af en laat het op een warme plek ongeveer 60 minuten rijzen tot het in volume verdubbeld is.

    Meng alle ingrediënten voor de hazelnootvulling. Is het mengsel te dik, voeg dan nog 1-2 tsp melk toe.

    Rol het deeg op een licht met bloem bestoven werkblad uit tot een rechthoek (ongeveer 30 x 20 cm). Verdeel de hazelnootvulling er gelijkmatig over.

    Rol het deeg vanaf de lange kant op. Snijd de rol in de lengte bijna helemaal door, zodat je twee slierten krijgt. Trek ze iets uit elkaar, draai ze om elkaar heen en vorm er een krans van. Druk de uiteinden stevig op elkaar.

    Leg de krans op een met bakpapier beklede bakplaat, dek hem af en laat hem nog 30 minuten rijzen.

    Bestrijk de krans met het mengsel van eigeel en melk en bestrooi hem met hazelnootschaafsel. Baktijd: 20-25 minuten op 180°C tot hij goudbruin is.
