    Meng de bloem, suiker en het zout. Voeg de koude boterblokjes toe en wrijf ze met je vingertoppen of een deegmes door de bloem tot een kruimelig mengsel. Voeg de yoghurt toe en kneed het deeg net zolang tot het samenkomt. Wikkel het in vershoudfolie en laat het minstens 30 minuten opstijven in de koelkast.

    Schil de appels, verwijder het klokhuis en snijd ze in dunne plakjes. Schep ze om met een scheutje citroensap zodat ze niet verkleuren. Verwarm de oven voor op 350°F (180°C).

    Rol het deeg uit op een licht met bloem bestoven werkblad en steek er 6 gelijke cirkels uit (van ongeveer 5 inches / 12 cm doorsnede). Leg elke cirkel op een met bakpapier beklede bakplaat en strijk in het midden ongeveer 1 theelepel abrikozenjam uit; houd daarbij een rand van ¾ inch (2 cm) vrij.

    Leg de appelplakjes waaiervormig neer (drie kleine waaiers die elkaar iets overlappen) en bestrooi ze licht met bruine basterdsuiker.

    Vouw de deegranden ongeveer ½ inch (1 cm) naar binnen over de appels. Bestrijk de randen dun met het appel-citroensap en bestrooi ze met amandelschaafsel.

    Bak de galettes in 25-30 minuten goudbruin.
