Bereiding

    Klop de boter romig met de poedersuiker en het vanille-extract. Voeg de eidooier toe en blijf mixen tot een glad mengsel ontstaat.

    Meng in een aparte kom de bloem, het bakpoeder en het zout. Roer het bloemmengsel beetje bij beetje door het boter-eimengsel tot een soepel deeg ontstaat. Het deeg moet goed te kneden zijn, maar niet plakken.

    Draai kleine bolletjes van het deeg (van ongeveer 25 g per stuk). Druk met je vinger of een klein hulpmiddel een kuiltje in het midden van elk bolletje en maak het iets wijder.

    Doe een klein toefje abrikozenjam in elk kuiltje. Knijp het deeg voorzichtig weer dicht zodat de jam er helemaal in zit, met de dichtgeknepen kant naar beneden.

    Verwarm de oven voor op 180 °C (356 °F, boven- en onderwarmte). Leg de deegbolletjes op een met bakpapier beklede bakplaat en bak ze in 12-15 minuten gaar. De koekjes mogen niet te bruin worden en blijven vrij licht van kleur. Vlak na het bakken zijn de koekjes nog wat zacht, maar tijdens het afkoelen worden ze steviger.

    Laat de koekjes volledig afkoelen en bestuif ze daarna met poedersuiker.
