Mandarijnen Kruimelmuffins

Zachte, sappige muffins met fruitige mandarijntjes en een botergele, knapperige kruimellaag - goudbruin vanboven, luchtig vanbinnen en heerlijk bij de koffie.

Bereiding

    Verwarm de oven voor op 180°C / 350°F (boven- en onderwarmte). Bekleed een muffinvorm met 6 papieren vormpjes.

    Meng voor de kruimels de bloem en de suiker. Voeg de koude boter toe en wrijf die met je vingers door het mengsel tot er kruimels ontstaan. Zet koel weg in de koelkast.

    Klop het ei en de melk in een kom door elkaar. Voeg de olie toe en roer er daarna de suiker doorheen.

    Zeef de bloem, het bakpoeder en het zout boven het natte mengsel. Roer kort door tot alles net gemengd is (niet te lang roeren).

    Wentel de mandarijntjes eventueel door 1 tsp bloem en spatel ze voorzichtig door het beslag.

    Verdeel het beslag gelijkmatig over de 6 muffinvormpjes.

    Strooi er royaal de kruimels overheen.

Let them cool completely, then keep them in a container at room temperature - the crumble stays crunchiest when it is not trapped in condensation, so never pack them away while still warm. Dust with powdered sugar only once they are fully cooled, as the recipe notes, otherwise the sugar melts straight into the topping. If the crumble softens after a day, a few minutes in a warm oven crisps it up again.
