    Verwarm de oven voor op 190°C (375°F), boven- en onderwarmte. Bekleed een bakplaat met bakpapier.

    Vouw de deeglap dubbel en druk hem voorzichtig aan. Snijd er 12 driehoeken uit.

    Bestrijk met het mengsel van eidooier en melk, bestrooi met parelsuiker en bak 18-22 minuten tot ze goudbruin zijn. Laat volledig afkoelen.

    Wrijf de suiker en de citroenrasp door elkaar. Meng met de eidooiers, de maizena, het merg van het vanillestokje en een scheutje van de melk tot een glad geheel.

    Verwarm de rest van de melk samen met het uitgeschraapte vanillestokje. Haal het stokje eruit, klop het eimengsel erdoor en laat al roerend indikken. Roer het citroensap en de boter erdoor. Dek direct op de room af met vershoudfolie en laat volledig afkoelen.

    Roer de afgekoelde banketbakkersroom kort glad en doe hem in een spuitzak.

    Snijd de deegdriehoeken horizontaal doormidden, spuit er de citroen-vanilleroom op, leg de bovenkanten terug en bestuif licht met poedersuiker.
