Sinaasappel crumble muffins

    Verwarm de oven voor op 180°C / 350°F (boven- en onderwarmte) en bekleed een muffinvorm voor 6 muffins met papieren muffinvormpjes.

    Was de sinaasappel goed, rasp de schil fijn en pers het sap uit (ongeveer 100 ml / ⅓ cup + 1 tbsp).

    Wrijf de suiker en de geraspte sinaasappelschil met je vingertoppen door elkaar tot het geurig en licht vochtig is - zo komen de natuurlijke oliën vrij.

    Voeg het ei, de olie, de melk, het sinaasappelsap en het vanille-extract toe aan het suikermengsel en meng tot een glad geheel. Klop in een aparte kom de bloem, de gemalen amandelen, het bakpoeder en het zout door elkaar. Voeg de droge ingrediënten toe aan het natte mengsel en spatel voorzichtig door tot alles net gemengd is - het beslag moet zacht en smeuïg blijven.

    Wrijf voor de crumble de boter, bloem, suiker en sinaasappelschil door elkaar tot er kruimels ontstaan. Meng het amandelschaafsel en de gehakte amandelen erdoor.

    Verdeel het beslag gelijkmatig over de muffinvormpjes en strooi er royaal het amandelkruimelmengsel over.

    Bak ze in ongeveer 25 minuten goudbruin; ze zijn gaar als er geen beslag meer aan een satéprikker blijft plakken.

With flour instead of almonds the muffins turn out a little drier and firmer, so keep an eye on the 25-minute baking time. For the crumble you can simply leave out the almond flakes if you want a nut-free top.
