    Zeef de bloem in een grote kom en maak een kuiltje in het midden. Doe de gist, een beetje suiker en de lauwe melk erin, roer het licht door en laat het ongeveer 10 minuten staan tot het mengsel begint te schuimen.

    Voeg de overige ingrediënten toe en kneed alles tot een zacht, soepel deeg. Het deeg mag iets plakkerig zijn, maar moet goed te vormen blijven. Dek af en laat ongeveer 1 uur rijzen, tot het zichtbaar in volume is toegenomen.

    Kneed het deeg kort door en verdeel het in ongeveer 9 gelijke stukken. Bol elk stuk op en rol het daarna uit tot een rondje.

    Rol het rondje vanaf de onderkant strak op tot ongeveer halverwege. Snijd het resterende bovenste deel in meerdere dunne, gelijke reepjes. Vlecht ze zoals in de video en druk de uiteinden op elkaar. Buig ze daarna tot een halve maan.

    Leg de gevormde halve maantjes op een met bakpapier beklede bakplaat, dek ze af en laat ze nog 30 minuten rijzen.

    Bestrijk ze met het mengsel van eigeel en melk en bak ze in een voorverwarmde oven op 180 °C (350 °F, boven- en onderwarmte) in 18-22 minuten goudbruin.

    Bestrijk ze na het bakken eventueel licht met gesmolten boter of bestuif ze met poedersuiker. Een echte blikvanger en hemels van smaak.

They are best on the day of baking, so keep them in an airtight container at room temperature rather than in the fridge, which dries out the buttery crumb. For longer storage, freeze them once fully cooled and warm them briefly in the oven before serving. A fresh brush of melted butter after reheating brings back some of the shine and softness.

The two big ones are adding too much flour and skipping the second rise. The dough is meant to stay slightly sticky but shapeable, so resist dusting heavily - extra flour makes the brioche dry and dense. Also give the shaped crescents their full 30 minutes before baking, and press the braided end down firmly so the strips do not unravel in the oven; watch them near the end of the 18-22 minutes, since the egg wash browns fast.
