    Zeef de bloem in een kom en maak een kuiltje in het midden. Doe de gedroogde gist in het kuiltje, voeg een theelepel suiker en de lauwe melk toe. Roer door en laat het even schuimen.

    Dek het deeg af en laat het ongeveer 1 uur op kamertemperatuur rijzen, of tot het in volume verdubbeld is.

    Verdeel het deeg in 45 gelijke stukjes van ongeveer 12 g per stuk. Vorm elke brioche door 4 bolletjes als basis in een ingevette muffinvorm te leggen en er vervolgens nog een bolletje in het midden op te zetten, zodat een bloemvorm ontstaat.

    Laat de gevormde brioches afgedekt nog 45 minuten rijzen.

    Bestrijk de brioches met de eidooier en bak ze in een voorverwarmde oven op 180°C (350°F) (boven- en onderwarmte) 20-25 minuten, of tot ze goudbruin zijn.
