Bereiding

    Meng de bloem, poedersuiker, gemalen amandelen, het zout en de vanille. Voeg de koude boter toe en kneed alles snel tot een soepel deeg. Belangrijk: werk vlot, zodat het deeg niet warm wordt.

    Rol het deeg tot een lange rol, verpak het strak in vershoudfolie en leg het ongeveer 60 minuten in de koelkast.

    Verwarm de oven voor op 170 °C / 338 °F (boven- en onderwarmte). Bekleed een bakplaat met bakpapier.

    Snijd de gekoelde deegrol in plakjes van ongeveer 1.5 cm dik (ca. 20 g per stuk). Rol elk stukje tot een bolletje, daarna tot een kort rolletje en buig de uiteinden voorzichtig naar beneden tot de klassieke hoorntjes.

    Wordt het deeg tijdens het vormen te zacht, leg de gevormde hoorntjes dan nog 15-20 minuten in de koelkast, zodat ze tijdens het bakken hun vorm houden.

    Bak ze in 12-15 minuten gaar. De koekjes moeten bleek blijven, met hooguit een vleugje kleur aan de puntjes.

    Haal ze uit de oven, laat ze kort afkoelen en wentel ze lauwwarm (maar niet heet) voorzichtig door de poedersuiker met vanillesuiker, of bestuif ze licht.
