Bereiding

    Meng de bloem, suiker, bakpoeder en het zout. Voeg de boter in blokjes toe en wrijf alles tot een kruimelig mengsel. Kneed de eidooier en het vanille-extract erdoor. Is het deeg te droog, voeg dan een beetje koud water toe.

    Verdeel het deeg in twee gelijke delen: laat de ene helft naturel en meng de cacaopoeder door de andere helft.

    Kneed de twee soorten deeg licht door elkaar, zodat er een marmereffect ontstaat. Rol het uit op een met bloem bestoven werkblad tot een dikte van ongeveer 5 mm (¼ inch).

    Steek er rondjes uit (doorsnede 5 cm / 2 inches), leg ze op een bakplaat en bak ze op 180°C (350°F) in ongeveer 10-12 minuten gaar. Laat ze volledig afkoelen.

    Klop de boter romig, meng er beetje bij beetje de poedersuiker door en voeg daarna het vanille-extract en de melk toe.

    Spuit een dun laagje botercrème op de onderkant van een koekje en leg er een tweede koekje op, zodat je ze aan elkaar plakt.

Keep them in an airtight container, since the buttercream is butter-based and picks up fridge odors easily. They are best within a couple of days, because the moisture from the filling gradually softens the crisp cookie.
