Een zachte, luchtige brioche met prachtige spiralen van frambozenvulling - boterig, fruitig en mooi in elkaar gedraaid, met een fijne laag noten erop.

    Zeef de bloem in een kom en maak een kuiltje in het midden. Doe daar de gedroogde gist, een beetje suiker en een deel van de lauwe melk in. Laat het kort staan tot het licht gaat schuimen.

    Voeg de overige ingrediënten toe en kneed tot een soepel, zacht deeg. Dek af en laat 60-90 minuten rijzen tot het mooi in volume verdubbeld is.

    Roer de maizena glad met het water. Verwarm dit samen met de frambozenjam tot het iets indikt en goed gemengd is. Dek direct af met huishoudfolie en laat helemaal afkoelen.

    Rol het deeg uit tot een rechthoek en verdeel de afgekoelde frambozenvulling er gelijkmatig over.

    Rol het deeg vanaf de lange kant strak op.

    Snijd de rol in de lengte doormidden, zodat je twee lange slierten krijgt. Houd de snijkanten naar boven.

    Draai de twee slierten voorzichtig om elkaar heen en leg ze in de voorbereide cakevorm.

    Laat het nog 15-20 minuten rusten, bestrijk het daarna met het mengsel van eidooier en melk en bestrooi met gehakte amandelen of noten.

    Bak de brioche op 175°C (350°F), boven- en onderwarmte, in ongeveer 35-45 minuten mooi goudbruin. De baktijd kan per oven iets verschillen.
