    Zeef de bloem in een kom, maak een kuiltje in het midden en doe daar de gist, een beetje suiker en wat melk in. Laat dit 5-10 min staan tot het schuimt. Voeg de rest van de melk, de suiker, het zout en het halve ei toe en kneed het geheel. Kneed tot slot de boter erdoor tot je een soepel deeg hebt (8-10 min). Dek af en laat 1 h rijzen tot het deeg in volume verdubbeld is.

    Klop voor de custard de melk, suiker, maïzena, eidooiers en vanille in een steelpan door elkaar. Breng al roerend aan de kook tot de massa indikt. Haal van het vuur, dek af met vershoudfolie, laat afkoelen en schep in een spuitzak.

    Verdeel het deeg in 8 bolletjes en rol elk bolletje uit tot een rechthoek. Spuit een streep custard langs de lange zijde en leg er 4-5 bosbessen op. Vouw dicht en druk de rand goed aan. Snijd 5-6 inkepingen in de andere zijde, rol op en vorm er een krans van door de uiteinden op elkaar te drukken.

    Leg de kransjes op een bakplaat, dek af en laat 15-20 min rusten. Bestrijk met eidooier en bak ze in 20-25 min goudbruin op 180 °C / 350 °F (boven- en onderwarmte). Laat afkoelen op een rooster en bestuif met poedersuiker. Van de overgebleven custard maak je een lekker toetje in een glaasje met vers fruit. Je bosbessen-custardkransjes zijn klaar: goudbruin vanbuiten, romig vanbinnen en met een fruitige verrassing.

The custard is the ideal make-ahead component: cook it, cover it directly with plastic wrap so no skin forms, and chill it until you need it. Whisk it smooth again before piping, as it stiffens in the fridge. You can also shape the rings and let them do their 15-20 minute rest while the oven preheats to 180 °C / 350 °F.

The most common cause is too much custard or piping it too close to the edge - keep the line along the long side with a clear border so the fold can be pressed shut firmly. Press the seam well and make sure the 5-6 slits are cut only into the opposite side, not through the filled seam.
