    Zeef de bloem voor het gistdeeg in een mengkom. Maak een kuiltje in het midden en doe daar de gist, een beetje van de suiker en een deel van de lauwe melk in. Roer voorzichtig door en laat ongeveer 10 minuten staan tot het gaat bubbelen en de gist actief is.

    Voeg de rest van de suiker, het zout, de rest van de melk, de eidooier en de zachte boter toe. Kneed alles tot een zacht, licht plakkerig deeg (ongeveer 8-10 minuten). Dek af en laat op een warme plek ongeveer 1 uur rijzen, of tot het deeg in volume is verdubbeld.

    Maak ondertussen het koekjesdeeg: meng de bloem, de suiker en het vanille-extract. Voeg de zachte boter en 1 tbsp melk toe en kneed er kort een glad deeg van. Voeg zo nodig nog een scheutje melk toe. Wikkel in vershoudfolie en leg in de koelkast.

    Verdeel het gerezen gistdeeg in 6 gelijke stukken en bol ze op. Verdeel het koekjesdeeg in 6 stukjes en rol elk stukje uit tot een platte cirkel (bestuif zo nodig met bloem).

    Leg over elk bolletje deeg een koekjescirkel - als een mutsje, maar niet helemaal tot onderaan. Kerf met een scherp mes een ruitpatroon in de bovenkant en bestrooi met kristalsuiker.
