Citroenmuffins

    Verwarm de oven voor op 180 °C (350 °F) boven- en onderwarmte. Bekleed een muffinvorm met 6 papieren vormpjes of vet de vorm goed in.

    Meng de suiker met de geraspte citroenschil en wrijf het voorzichtig door elkaar.

    Voeg de boter toe en klop tot een lichte, romige massa.

    Voeg de eieren één voor één toe en klop na elk ei goed door tot het beslag luchtig is.

    Meng in een aparte kom de bloem, het bakpoeder en het zout. Voeg dit afwisselend met het citroensap en de yoghurt toe aan het beslag en meng net zolang tot alles is opgenomen. Niet te lang doorroeren.

    Verdeel het beslag gelijkmatig over de muffinvormpjes.

    Bak de muffins in ongeveer 20-25 minuten goudbruin en gaar; controleer met een satéprikker of er geen beslag meer aan blijft plakken.

    Laat ze afkoelen en werk ze eventueel af met citroenglazuur: roer de poedersuiker met het citroensap glad en trek er dunne strepen mee over de muffins.
