Bereiding

    Los de gist op in de lauwe melk en laat staan tot het gaat schuimen.

    Meng in een kom de bloem, suiker en het zout. Voeg de opgeloste gist, de zachte boter en het ei toe aan de bloem en kneed tot een soepel deeg.
  4. Dek het deeg af en laat het op een warme plek ongeveer 1 uur rijzen, of tot het in volume verdubbeld is. Voor de banketbakkersroom

    Verwarm de melk in een steelpan zonder deze aan de kook te brengen. Klop in een kom de eierdooiers, suiker en maïzena glad.

    Giet de warme melk al roerend langzaam bij het eierdooiermengsel. Giet het mengsel terug in de pan en laat het op middelhoog vuur al roerend indikken.

    Rol het gistdeeg op een licht met bloem bestoven werkblad uit tot een rechthoek.

    Verdeel de afgekoelde banketbakkersroom gelijkmatig over het deeg en strooi er de stukjes chocolade over.

    Rol het deeg op en snijd het in 7 gelijke plakken. Leg de plakken in de ingevette bakvorm.

    Dek de chinois af en laat nog 30 minuten rijzen. Bestrijk met het mengsel van eierdooier en melk.

    Verwarm de oven voor op 180°C en bak de chinois in ongeveer 25-30 minuten goudbruin. Haal uit de oven en laat afkoelen.
