Bereiding

    Schil de appel, verwijder het klokhuis en snijd hem in kleine blokjes. Meng met citroensap, suiker, kaneel en maizena.

    Bak ze kort in een pan op middelhoog vuur tot ze net zacht zijn. Laat goed uitlekken en afkoelen. Banketbakkersroom

    Verwarm 200 ml van de melk met het vanille-extract.

    Klop in een aparte kom de eidooier, suiker, maizena en de resterende 50 ml melk door elkaar.

    Voeg de hete melk al kloppend langzaam bij het eimengsel, giet alles terug in de pan en laat het al roerend indikken.

    Roer de boter erdoor, dek af met vershoudfolie (direct op de room) en laat volledig afkoelen. Zanddeeg

    Kneed de boter, poedersuiker, vanillesuiker, zout, eidooier en yoghurt snel tot een net samenhangend geheel.

    Voeg de bloem toe en kneed tot een soepel deeg. Laat ongeveer 30 minuten koud worden.

    Rol het deeg ongeveer 3-4 mm dik uit. Steek er rondjes uit (ca. 10 cm Ø) met een gekartelde uitsteker.

    Druk het midden van elk rondje licht aan met je vingers en trek de randjes iets omhoog. Prik het midden in met een vork.

    Verdeel ongeveer 1 tbsp banketbakkersroom over het midden en houd een rand van 0,5 cm vrij. Schep de appelvulling erop en bestrooi met amandelschaafsel.

    Leg ze op een met bakpapier beklede bakplaat en bak ze op 180 °C (350 °F) in ongeveer 18-20 minuten lichtgoudbruin.
