    Jablka oloupejte, zbavte jádřince a nakrájejte najemno. V kastrolku je s cukrem, citronovou šťávou, vodou a několika jablečnými jadérky vařte na středním plameni asi 10-12 minut, dokud nezměknou a mírně se nerozpadnou. Jablka lehce rozmačkejte (nerozmixovávejte je). Odstavte z plotny, vyjměte jadérka a nechte kompot úplně vychladnout.

    V míse ušlehejte máslo, cukr, vanilku a sůl do krémova. Přidejte žloutek a krátce promíchejte. Přisypte mouku a mleté mandle a zpracujte v měkké, hladké těsto. Nechte 20-30 minut odpočinout v chladu.

    Vychlazené těsto rozválejte na lehce pomoučeném vále na tloušťku asi 0,8-1 cm. Vykrajujte kolečka (Ø 5 cm / 2 in) a pokládejte je na plech vyložený pečicím papírem.

    Doprostřed každého kolečka dejte asi 1 tsp jablečného kompotu a jemně ho lehce rozetřete. Okraje posypte mandlovými lupínky a zlehka je přitiskněte.

    Pečte v předehřáté troubě na 170 °C / 340 °F (horní a spodní ohřev) 18-20 minut, dokud okraje nezezlátnou. Zatepla budou ještě měkké, ale vychladnutím ztuhnou.
