Postup

    Jablko oloupejte, zbavte jádřince a nakrájejte na drobné kostičky. Promíchejte s citronovou šťávou, cukrem, skořicí a škrobem.

    Na pánvi krátce orestujte na středním plameni, dokud lehce nezměknou. Dobře sceďte a nechte vychladnout. Vanilkový krém

    200 ml mléka zahřejte s vanilkovým extraktem.

    V misce prošlehejte žloutek, cukr, škrob a zbylých 50 ml mléka.

    Za stálého šlehání pomalu vlévejte horké mléko do žloutkové směsi, pak vraťte zpět do hrnce a vařte, dokud krém nezhoustne.

    Vmíchejte máslo, přikryjte potravinářskou fólií přiloženou přímo na povrch a nechte úplně vychladnout. Křehké těsto

    Máslo, moučkový cukr, vanilkový cukr, sůl, žloutek a jogurt rychle zpracujte, jen než se spojí.

    Přidejte mouku a vypracujte hladké těsto. Nechte asi 30 minut odpočinout v chladu.

    Těsto rozválejte na tloušťku asi 3-4 mm. Vykrajovátkem na tartaletky s vroubkovaným okrajem vykrájejte kolečka (o průměru asi 10 cm).

    Střed každého kolečka lehce zamáčkněte prsty a okraje mírně vytáhněte nahoru. Střed propíchejte vidličkou.

    Doprostřed rozetřete asi 1 tbsp vanilkového krému, po okraji nechte 0,5 cm volné. Navrch dejte lžící jablečnou náplň a posypte plátky mandlí.

    Přeložte na plech vyložený pečicím papírem a pečte při 180 °C (350 °F) asi 18-20 minut dozlatova.
