Kok dem i en kjele med sukker, sitronsaft, vann og noen eplekjerner på middels varme i ca. 10-12 minutter, til de er myke og har kokt litt ut. Mos eplene lett (ikke kjør dem til puré). Ta kjelen av platen, fjern kjernene og la kompotten bli helt kald.

    Pisk smør, sukker, vanilje og salt luftig og kremet i en bolle. Tilsett eggeplommen og rør kort. Tilsett mel og malte mandler, og elt til en myk og smidig deig. La den hvile kaldt i 20-30 minutter.

    Kjevle ut den kalde deigen på lett melet benk til ca. 0,8-1 cm tykkelse. Stikk ut runde kjeks (Ø 5 cm / 2 in) og legg dem på et stekebrett med bakepapir.

    Legg ca. 1 tsp eplekompott midt på hver kjeks og bre den forsiktig litt utover. Strø mandelflak langs kantene og trykk dem lett ned.

    Stek kjeksene i forvarmet ovn på 170 °C / 340 °F (over- og undervarme) i 18-20 minutter, til kantene er gyllne. De er fortsatt myke rett fra ovnen, men stivner når de kjøler seg ned.

Don't swap in almond flour that is very fine and defatted, as it absorbs more moisture and will dry out the dough.
