    Die Trockenhefe in einer Schüssel in der lauwarmen Milch auflösen und etwa 5-10 Minuten stehen lassen, bis sie aktiviert ist. Dann Zucker, geschmolzene Butter, Ei und eine Prise Salz dazugeben.

    Das Mehl nach und nach zur Hefemischung geben und zu einem glatten Teig verkneten. Das dauert etwa 10-12 Minuten. Der Teig sollte elastisch sein und nicht kleben. Bei Bedarf noch etwas Mehl zugeben.

    Den Teig in eine Schüssel geben, abdecken und an einem warmen Ort etwa 1-1.5 Stunden gehen lassen, bis er sein Volumen verdoppelt hat.

    Den aufgegangenen Teig kurz durchkneten, in drei gleich große Portionen teilen, rund schleifen und abgedeckt 10 Minuten ruhen lassen. Anschließend jede Portion zu einem etwa 40 cm langen Strang rollen. Die Stränge zu einem Zopf flechten.

    Den Zopf auf ein mit Backpapier ausgelegtes Backblech legen. Abgedeckt weitere 30-45 Minuten gehen lassen, bis er sichtbar aufgegangen ist. 1 Eigelb mit einem Esslöffel Milch oder Sahne verrühren und den Zopf damit bestreichen. Nach Belieben mit Mandeln und Hagelzucker bestreuen.

    Den Backofen 5 Minuten vor dem Backen auf 180°C (356°F) Ober-/Unterhitze vorheizen.
