Zubereitung

    Butter und Zucker schaumig rühren, dann das Eigelb unterrühren. Mehl, gemahlene Mandeln, Backpulver und Salz dazugeben und alles zu einem glatten Teig verkneten. Kurz kalt stellen.

    Die Blaubeeren mit Zitronensaft und Zucker in einem kleinen Topf erhitzen. Die Speisestärke in 1 tsp kaltem Wasser anrühren, einrühren und kurz aufkochen lassen, bis die Masse leicht andickt. Vom Herd nehmen und abkühlen lassen.

    Mehl, Zucker und Butter mit den Fingern zu Streuseln verreiben, dann die gehackten Mandeln untermischen.

    Den Teig ausrollen, Kreise ausstechen (ca. 8 cm Ø) und in kleine Tartelette-Förmchen legen - ohne den Rand hochzudrücken.

    Die Blaubeermasse auf die Teigkreise geben und mit den Streuseln bestreuen. Bei 180 °C (350 °F) Ober-/Unterhitze etwa 28-30 Minuten backen, bis die Streusel leicht goldbraun sind.

    Vollständig auskühlen lassen, vorsichtig aus den Förmchen lösen und mit Puderzucker bestäuben. Weich, fruchtig und herrlich knusprig obenauf - eine einfache Kleinigkeit, die nach purem Sommerglück schmeckt.
