    Den Backofen auf 220 °C (430 °F) Ober-/Unterhitze oder 200 °C (390 °F) Umluft vorheizen.

    Den Blätterteig von der langen Seite her straff zu einer Rolle aufrollen. Die Rolle in 8 gleich große Stücke schneiden. Jedes Stück mit der Schnittfläche nach oben in eine Mulde eines Muffinblechs setzen.

    Den Teig mit den Daumen von der Mitte nach außen drücken, sodass Boden und Rand gleichmäßig ausgekleidet sind. Den Boden jeder Form mehrmals mit einer Gabel einstechen.

    Frischkäse, Zucker und Vanilleextrakt in einer Schüssel glatt rühren. Das Ei unterrühren, anschließend Sahne und Speisestärke einrühren, bis alles gut verbunden ist.

    Die Füllung in die vorbereiteten Teigförmchen gießen, dabei oben etwas Platz lassen. 18-22 Minuten backen, bis die Oberfläche leicht gebräunt ist.

    Die Tartelettes zuerst im Blech abkühlen lassen, dann vorsichtig herauslösen. Diese cremigen Tartelettes sind die perfekte Verbindung aus knusprig und samtig.

Full-fat block cream cheese gives the thickest, most velvety result, so stick with it if you can. Spreadable tub varieties contain more water and can make the filling looser, so drain off any liquid before whisking. Whatever you use, whisk it smooth with the sugar and vanilla first, because lumps at that stage will still be there after baking.
