Fremgangsmåde

    Sigt melet til gærdejen ned i en skål. Lav en fordybning i midten, og kom gæren, lidt af sukkeret og lidt af den lunkne mælk i. Rør forsigtigt rundt, og lad det stå i ca. 10 minutter, til det bobler og gæren er i gang.

    Tilsæt resten af sukkeret, saltet, resten af mælken, æggeblommen og det bløde smør. Ælt det hele til en blød, let klistret dej (ca. 8-10 minutter). Dæk skålen til, og lad dejen hæve et lunt sted i ca. 1 time, eller til den er dobbelt så stor.

    Lav småkagedejen i mellemtiden: bland mel, sukker og vanilleekstrakt. Tilsæt det bløde smør og 1 spsk mælk, og ælt det kort sammen til en glat dej. Kom lidt mere mælk i, hvis dejen er for tør. Pak dejen ind i husholdningsfilm, og læg den på køl.

    Del den hævede gærdej i 6 lige store stykker, og form dem til kugler. Del småkagedejen i 6 stykker, og rul hvert stykke ud til en flad cirkel (drys med lidt mel, hvis det er nødvendigt).

    Læg en småkagecirkel over hver dejkugle som en hætte - den skal ikke nå helt ned i bunden. Rids et rudemønster i toppen med en skarp kniv, og drys med sukker.

Keep them at room temperature in a loosely covered container or paper bag rather than an airtight box, and eat them within a day or two. To revive the crust, warm them for a few minutes in an oven at the baking temperature of 180 °C (350 °F).

Yes - the cookie dough is the easiest part to make ahead, since it keeps well wrapped in the fridge; just let it soften slightly before rolling it into circles. The yeast dough can also do its first rise slowly in the fridge overnight instead of at room temperature, then be divided into 6 balls the next morning. Either way, keep the final 30-minute rest after topping the balls, since that is what gives the buns their lift in the oven.

The recipe has you place the cookie circle like a cap that does not reach all the way to the bottom, which leaves room for the yeast dough to expand upward without pushing the crust off.
