    Forvarm ovnen til 175°C (350°F) over- og undervarme. Smør formen, eller beklæd den med bagepapir.

    Mos bananerne grundigt med en gaffel, til de er helt bløde.

Coconut Banana Loaf Cake Questions

Go for heavily speckled or almost brown bananas - they mash smooth with a fork, which is exactly what the recipe asks for, and they carry most of the sweetness alongside the 100 g of sugar. Firm yellow bananas stay lumpy and make the loaf noticeably drier and blander. Frozen bananas work well: thaw them completely, keep the liquid that leaks out, and mash everything together.

Sunflower oil can be replaced 1:1 with any neutral oil, or with 80 ml of melted, slightly cooled butter for a richer crumb. For the coconut, desiccated coconut works but absorbs more moisture, so add a splash more milk to keep the batter pourable. If you skip the coconut entirely you lose the tropical note and the batter gets looser - reduce the milk to about 30 ml in that case.

The batter here is fairly loose from the bananas, oil, and 50 ml of milk, so 30 g of chips can drift downward while it bakes. Toss the chips in a teaspoon of the measured flour before folding them in - the coating helps them grip the batter. Folding them in last, as the recipe does, and getting the loaf into the preheated oven right away also limits sinking.

Overmixing after the flour goes in. The recipe says to fold the dry mix in gently for a reason: stirring hard develops gluten and turns a moist loaf tough and rubbery, and it can cause a heavy, gummy streak in the middle. Stop as soon as no dry flour is visible - a few small lumps are fine. The second common mistake is pulling the cake out too early; trust the toothpick test rather than the color of the top.

Don't mix the batter ahead - the baking powder and baking soda start working as soon as they hit the wet bananas and milk, so it should go into the pan and the oven right away. You can, however, grease or line the pan and weigh out the dry ingredients the night before. Once fully cooled, wrap the loaf airtight at room temperature; it stays soft for 2-3 days. For longer storage, slice it and freeze the slices, then thaw at room temperature.
