Fremgangsmåde

    Skræl æblerne og riv dem. Kog dem i en pande med sukker, citronsaft og kanel i ca. 8 minutter, til de er bløde og tyknede, og det meste af væden er fordampet.

    Rør de hakkede valnødder i, og lad fyldet køle helt af. Det skal være blødt, men ikke vandet.

    Til dejen piskes smør og flormelis luftigt. Tilsæt olie, yoghurt, vaniljeekstrakt og salt, og rør det godt sammen.

    Bland mel og bagepulver, og tilsæt det lidt ad gangen, til dejen er blød og ikke klæber.

    Lad dejen hvile på køl i 20 minutter.

    Rul dejen ud i ca. 3–4 mm tykkelse, og stik cirkler ud (ca. 7 cm i diameter).

    Saml dejresterne, ælt dem kort sammen, rul dem ud igen, og stik flere cirkler ud, indtil al dejen er brugt.

    Læg ca. 1 topfuld teskefuld fyld på den ene halvdel af hver cirkel. Fold dejen over, og tryk kanterne let sammen, så de lukker.

    Bag ved 170°C (340°F) over- og undervarme i ca. 18–20 minutter. De skal forblive lyse med kun let gyldne kanter.

The flour amount is a range (250-280 g) because flours absorb differently, so add it gradually and stop as soon as the dough is soft but no longer sticks to your hands. The dough can also rest longer than the 20 minutes given; if it has been chilled for hours it will be firm, so let it sit at room temperature briefly until it rolls out without cracking. You can also shape the filled cookies and bake them straight afterwards.

Let the cookies cool completely, then keep them in an airtight tin at room temperature - the apple filling keeps them moist, and a sealed container stops the shortcrust from drying out. Don't refrigerate them, as that tends to make this kind of buttery dough firm and dry. Because they are baked light with only slightly golden edges, they stay tender rather than crisp.
