Valmistus

    Lisää loput sokerista, kananmuna, loput maidosta, suola ja vanilja. Vaivaa tasaiseksi taikinaksi. Lisää voi vähitellen ja jatka vaivaamista 8-10 minuuttia, kunnes taikina on pehmeää, kimmoisaa ja hieman kiiltävää.

    Peitä kulho ja anna taikinan kohota 60-90 minuuttia, kunnes se on selvästi kaksinkertaistunut.

    Jaa taikina 3 yhtä suureen osaan. Kauli jokainen osa noin 22 cm (9 tuumaa) halkaisijaltaan olevaksi ympyräksi.

A brioche dough with 60 g soft butter worked into 250 g flour is naturally soft and slightly tacky, so resist the urge to add lots of extra flour. Keep it at room temperature in an airtight container or wrapped in a clean kitchen towel - the fridge dries enriched yeast dough out quickly. It is at its best on baking day; after that, a few minutes in a warm oven brings back the soft texture. Dust with the powdered sugar only just before serving, since it dissolves on standing.

You can let the dough do its first rise slowly in the fridge overnight instead of the 60-90 minutes at room temperature, then bring it back to room temperature before rolling. Chilled dough is actually easier to roll into the three 22 cm circles and to twist neatly. Do the shaping, the 20-30 minute second rise, and the egg-yolk-and-milk brushing on the day you bake.

The two big ones are cutting all the way through the middle and skipping the final rise. Mark the center with a cutter or glass only as a guide and stop every one of the 16 cuts at that mark, otherwise the star falls apart into separate strips. Also pinch each twisted pair firmly at the tips - untwisted or loosely sealed ends open up in the oven and the jam runs out.
