    Ανακατέψτε το αλεύρι, τη ζάχαρη άχνη, τα τριμμένα αμύγδαλα, το αλάτι και τη βανίλια. Προσθέστε το κρύο βούτυρο και ζυμώστε γρήγορα μέχρι να γίνει μια λεία ζύμη. Σημαντικό: δουλέψτε γρήγορα, ώστε να μη ζεσταθεί η ζύμη.

    Πλάστε τη ζύμη σε ένα μακρύ ρολό, τυλίξτε το σφιχτά με μεμβράνη και βάλτε το στο ψυγείο για περίπου 60 λεπτά.

    Προθερμάνετε τον φούρνο στους 170 °C / 338 °F (πάνω-κάτω αντιστάσεις). Στρώστε ένα ταψί με αντικολλητικό χαρτί.

    Αν η ζύμη μαλακώσει πολύ όσο πλάθετε, ξαναβάλτε τα μισοφέγγαρα στο ψυγείο για 15-20 λεπτά, ώστε να κρατήσουν το σχήμα τους στο ψήσιμο.

    Βγάλτε τα από τον φούρνο, αφήστε τα να κρυώσουν λίγο και, όσο είναι ακόμη χλιαρά (όχι καυτά), βουτήξτε τα απαλά στη ζάχαρη άχνη με τη ζάχαρη βανίλιας ή πασπαλίστε τα ελαφρά.

If it still refuses to hold, your butter may be too cold straight from the fridge; let the cubes stand a few minutes, but keep working swiftly so the butter does not warm through.

Spreading means the butter was too warm when the cookies went in, which is why the recipe calls for chilling the formed crescents another 15-20 minutes if the dough softens while shaping. Roll each piece into a ball first, then a short log, and bend the ends downward so the crescent is even in thickness - thin, overworked tips brown fast and break.
