    Προθερμαίνουμε τον φούρνο στους 190°C (375°F), στις αντιστάσεις πάνω-κάτω. Στρώνουμε ένα ταψί με αντικολλητικό χαρτί.

    Διπλώνουμε το φύλλο της ζύμης στη μέση και το πιέζουμε ελαφρά να κολλήσει. Το κόβουμε σε 12 τρίγωνα.

    Αλείφουμε με το μείγμα κρόκου-γάλακτος, πασπαλίζουμε με τη ζάχαρη σε κόκκους και ψήνουμε για 18-22 λεπτά, μέχρι να ροδίσουν. Τα αφήνουμε να κρυώσουν εντελώς.

    Τρίβουμε τη ζάχαρη με το ξύσμα λεμονιού στα δάχτυλά μας. Ανακατεύουμε με τους κρόκους, το κορν φλάουρ, τους σπόρους της βανίλιας και λίγο από το γάλα, μέχρι να ομογενοποιηθούν.

    Ζεσταίνουμε το υπόλοιπο γάλα μαζί με τον ξυσμένο λοβό βανίλιας. Αφαιρούμε τον λοβό, ρίχνουμε το μείγμα των αυγών χτυπώντας με σύρμα και μαγειρεύουμε ανακατεύοντας συνεχώς, μέχρι να δέσει. Ανακατεύουμε μέσα τον χυμό λεμονιού και το βούτυρο. Σκεπάζουμε την κρέμα με μεμβράνη σε επαφή με την επιφάνειά της και την αφήνουμε να κρυώσει εντελώς.

    Χτυπάμε λίγο την παγωμένη κρέμα να γίνει λεία και τη βάζουμε σε κορνέ.

    Κόβουμε τα τριγωνάκια οριζόντια στη μέση, γεμίζουμε με την κρέμα λεμονιού-βανίλιας, ξαναβάζουμε τα καπάκια και πασπαλίζουμε ελαφρά με ζάχαρη άχνη.
