    Ανακατεύουμε το αλεύρι, τη ζάχαρη, τη μαγιά και το αλάτι. Προσθέτουμε το γάλα, το αυγό και το βούτυρο και ζυμώνουμε μέχρι να γίνει μια λεία ζύμη (8-10 λεπτά). Σκεπάζουμε και αφήνουμε να φουσκώσει για 60-90 λεπτά.

    Χωρίζουμε τη ζύμη σε 10 κομμάτια (περίπου 50 g το καθένα), πλάθουμε μπαλάκια και μετά τα κάνουμε ελαφρώς οβάλ.

    Τα βάζουμε σε ταψί, τα αφήνουμε να φουσκώσουν ξανά για 15-20 λεπτά και τα αλείφουμε με το μείγμα κρόκου-γάλακτος.

    Ψήνουμε στους 180°C (350°F) για 18-22 λεπτά, μέχρι να ροδίσουν. Τα αφήνουμε να κρυώσουν εντελώς.

    Για τη γέμιση, ζεσταίνουμε το γάλα. Χτυπάμε τον κρόκο με τη ζάχαρη και το κορν φλάουρ, ρίχνουμε το καυτό γάλα και μαγειρεύουμε μέχρι να δέσει η κρέμα.

    Ανακατεύουμε μέσα τον χυμό λεμονιού, το ξύσμα και το βούτυρο. Σκεπάζουμε με μεμβράνη σε επαφή με την κρέμα, αφήνουμε να κρυώσει και μετά χτυπάμε μέχρι να γίνει λεία.

    Ανοίγουμε μια μικρή τρύπα στο πλάι κάθε μπριός και τα γεμίζουμε με την κρέμα λεμονιού.

    Ανακατεύουμε τη ζάχαρη άχνη με τον χυμό λεμονιού μέχρι να γίνει ένα πηχτό γλάσο, σχεδιάζουμε γραμμές πάνω στα μπριός και πασπαλίζουμε ελαφρά με ζάχαρη άχνη. Πεντανόστιμα αφράτα μπριός με βελούδινη καρδιά λεμονιού και κομψό, καθαρό φινίρισμα.

Keep kneading rather than adding flour; the dough should pull away from the bowl and feel smooth and elastic. Since you already have a lemon for the zest, juicing it usually covers both.

Once filled, the buns contain an egg-yolk-and-milk cream, so keep them in the fridge in a covered container rather than at room temperature. Take them out 20-30 minutes before serving so the brioche softens again, as the crumb firms up when chilled. Unfilled baked buns keep better in an airtight container at room temperature.

Make it a day ahead, refrigerate it, then whisk it smooth before filling. You can also bake the buns in advance and fill and glaze them shortly before serving, which keeps the glaze crisp and the brioche from going soggy.

Lumps usually come from pouring the hot milk into the yolk, sugar and cornstarch mixture too fast - add it gradually while whisking, then cook until thick. A thin cream means it did not cook long enough for the 15 g of cornstarch to set; keep stirring over heat until it visibly thickens. Also stir in the lemon juice, zest and butter at the end, and cover the surface directly with plastic wrap so no skin forms.
