    Κοσκινίστε το αλεύρι σε ένα μπολ, κάντε μια λακκούβα στη μέση και ρίξτε τη μαγιά, λίγη ζάχαρη και λίγο γάλα. Αφήστε το 5-10 λεπτά μέχρι να αφρίσει. Προσθέστε το υπόλοιπο γάλα, τη ζάχαρη, το αλάτι και το μισό αυγό και ζυμώστε. Τέλος, ενσωματώστε ζυμώνοντας το βούτυρο μέχρι η ζύμη να γίνει λεία (8-10 λεπτά). Σκεπάστε και αφήστε τη να φουσκώσει 1 ώρα, μέχρι να διπλασιαστεί.

    Για την κρέμα, χτυπήστε σε μια κατσαρόλα το γάλα, τη ζάχαρη, το κορν φλάουρ, τους κρόκους και τη βανίλια. Βάλτε τα να πάρουν βράση ανακατεύοντας συνέχεια, μέχρι να δέσει η κρέμα. Αποσύρετε από τη φωτιά, καλύψτε με μεμβράνη, αφήστε την να κρυώσει και βάλτε την σε κορνέ.

    Χωρίστε τη ζύμη σε 8 μπαλάκια και ανοίξτε το καθένα σε ορθογώνιο φύλλο. Με το κορνέ απλώστε μια γραμμή κρέμας κατά μήκος της μεγάλης πλευράς και βάλτε 4-5 βατόμουρα. Διπλώστε και κλείστε καλά την άκρη. Στην άλλη πλευρά κάντε 5-6 χαρακιές, τυλίξτε σε ρολό και σχηματίστε ένα κουλούρι, ενώνοντας πιέζοντας τις δύο άκρες.

    Βάλτε τα κουλούρια σε ταψί, σκεπάστε τα και αφήστε τα να ξεκουραστούν 15-20 λεπτά. Αλείψτε τα με κρόκο αυγού και ψήστε τα στους 180 °C / 350 °F (πάνω-κάτω αντιστάσεις) για 20-25 λεπτά, μέχρι να ροδίσουν. Αφήστε τα να κρυώσουν σε σχάρα και πασπαλίστε τα με ζάχαρη άχνη. Η κρέμα που περισσεύει γίνεται ένα ωραίο επιδόρπιο σε ποτήρι με φρέσκα φρούτα. Τα κουλούρια με κρέμα και βατόμουρα είναι έτοιμα: τραγανά και ροδοψημένα споза έξω, κρεμώδη μέσα, με μια φρουτένια έκπληξη.

The most common cause is too much custard or piping it too close to the edge - keep the line along the long side with a clear border so the fold can be pressed shut firmly. Press the seam well and make sure the 5-6 slits are cut only into the opposite side, not through the filled seam.
