Zubereitung

    Das Mehl in eine große Schüssel sieben und in der Mitte eine Mulde formen. Trockenhefe und 30 g Zucker in die Mulde geben.

    Die Milch leicht erwärmen und in die Mulde gießen. Stehen lassen, bis die Hefe Bläschen wirft.

    Ei und geschmolzene Butter zugeben. Alles zu einem glatten Teig verkneten.

    Den Teig halbieren. Unter eine Hälfte Kakaopulver und 20 g Zucker kneten - das ergibt den Schokoteig.

    Beide Teige zugedeckt an einem warmen Ort etwa 1 Stunde gehen lassen, bis sie sich verdoppelt haben.

    Die Teige noch einmal durchkneten.

    Den hellen Teig zu einem Rechteck (etwa 20 x 25 cm) ausrollen. Mit dem dunklen Teig ebenso verfahren.

    Das dunkle Teigrechteck auf den hellen Teig legen, dabei etwa ein Drittel des hellen Teigs frei lassen.

    Das freie Drittel des hellen Teigs über das dunkle Teigrechteck klappen und dann noch einmal einschlagen.

    Den Teig zu einem Rechteck ausrollen (passend zur Größe der Kastenform). Das Rechteck so aufrollen, dass die helle Seite außen liegt.

    Die Teigrolle in die passende Kastenform legen und mit einem Messer schräge Schnitte einritzen, damit das Zebramuster entsteht.

    Das Brot zugedeckt etwa 1 Stunde gehen lassen, bis es sich fast verdoppelt hat.

    Den Backofen auf 180 Grad Celsius vorheizen.

    Das Brot mit einer Mischung aus Eigelb und Milch bestreichen.

    Das Zebrabrot etwa 25-30 Minuten backen, bis es goldbraun ist.

    Nach dem Backen aus der Form stürzen und mit einem Tuch abgedeckt auf einem Kuchengitter auskühlen lassen.
