Eine weiche, fluffige Brioche mit wunderschönen Himbeer-Wirbeln - buttrig, fruchtig und perfekt verdreht, mit feinem Nusstopping.

Zutaten

Zubereitung

    Das Mehl in eine Schüssel sieben und in der Mitte eine Mulde formen. Trockenhefe, etwas Zucker und einen Teil der lauwarmen Milch hineingeben. Kurz anspringen lassen, bis es leicht schäumt.

    Die restlichen Zutaten dazugeben und alles zu einem glatten, weichen Teig verkneten. Zugedeckt 60-90 Minuten gehen lassen, bis er sich schön verdoppelt hat.

    Speisestärke und Wasser glatt rühren. Zusammen mit der Himbeermarmelade erhitzen, bis die Masse etwas dicklicher und gut verbunden ist. Direkt mit Frischhaltefolie abdecken und vollständig auskühlen lassen.

    Den Teig zu einem Rechteck ausrollen und die abgekühlte Himbeerfüllung gleichmäßig darauf verstreichen.

    Von der langen Seite her straff aufrollen.

    Die Rolle längs durch die Mitte aufschneiden, sodass zwei lange Stränge entstehen. Die Schnittflächen dabei nach oben zeigen lassen.

    Beide Stränge vorsichtig miteinander verdrehen und in die vorbereitete Kastenform legen.

    Nochmals 15-20 Minuten ruhen lassen, dann mit der Eigelb-Milch-Mischung bestreichen und mit gehackten Mandeln oder Nüssen bestreuen.

    Bei 175°C (350°F) Ober-/Unterhitze etwa 35-45 Minuten goldbraun backen. Die Backzeit kann je nach Ofen leicht variieren.
