Zubereitung

    Das Mehl in eine Schüssel sieben und in der Mitte eine Mulde formen. Die Hefe mit 1 tsp Zucker und etwas von der lauwarmen Milch verrühren. In die Mulde gießen, abdecken und etwa 10 Minuten gehen lassen, bis sich Bläschen bilden.

    Das Ei, den restlichen Zucker, das Salz und die übrige Milch dazugeben. Alles zu einem glatten Teig verkneten. Anschließend die weiche Butter nach und nach einkneten. Den Teig abgedeckt an einem warmen Ort etwa 1 Stunde gehen lassen, bis er sein Volumen verdoppelt hat.

    Die Äpfel schälen, entkernen und in kleine Würfel schneiden.

    Den Teig mit den Fingern vorsichtig flach drücken. Die Apfelstücke nach und nach einarbeiten.

    Den Teig in etwa 9 gleich große Portionen teilen und zu Kugeln formen. Auf ein mit Backpapier ausgelegtes Blech setzen.

    Mit Eigelb bestreichen und mit Mandelblättchen bestreuen.

    Im vorgeheizten Backofen bei 180 °C (350 °F) Ober-/Unterhitze 20-25 Minuten goldbraun backen.
