Brioches Marbrées

Weiche, fluffige Brioche in zwei Schichten - zartes Vanille und kräftiges Schokolade. Locker, buttrig und einfach unwiderstehlich.

Zubereitung

    Die Milch leicht erwärmen und Hefe sowie Zucker darin auflösen. Etwa 10 Minuten stehen lassen, bis sich leicht Schaum bildet.

    Mehl, Salz, Vanille, Ei, Butter und die Hefemischung in einer großen Schüssel zusammengeben. Etwa 8-10 Minuten kneten, bis der Teig glatt und weich ist.

    Den Teig in zwei gleich große Hälften teilen (zur Genauigkeit abwiegen). In eine Hälfte den Kakao (und bei Bedarf 1 tsp Milch) einkneten, bis sie gleichmäßig dunkel ist.

    Beide Teige in getrennte Schüsseln geben, abdecken und etwa 1 Stunde gehen lassen, bis sich das Volumen verdoppelt hat.

    Den Vanilleteig auf einer leicht bemehlten Arbeitsfläche zu einem Rechteck ausrollen (ca. 25 × 30 cm / 10 × 12 in). Den Schokoladenteig auf dieselbe Größe ausrollen und vorsichtig auf den Vanilleteig legen. Leicht andrücken und noch einmal überrollen, damit beide Schichten fest zusammenhalten.

    Den Teig der Länge nach in etwa 5 cm (2 in) breite Streifen schneiden. Von der Mitte nach außen zwei kleine Einschnitte machen (nicht durchschneiden!) und locker aufrollen, sodass das Schichtmuster sichtbar bleibt.

    Die Briochis auf ein mit Backpapier ausgelegtes Blech setzen, abdecken und weitere 20-30 Minuten ruhen lassen.

    Dünn mit Milch bestreichen.

    Im vorgeheizten Ofen bei 180 °C / 350 °F (Ober-/Unterhitze) 15-18 Minuten goldbraun backen.

    Nach dem Backen mit weicher Butter bestreichen, vollständig auskühlen lassen und großzügig mit Puderzucker bestäuben. Weich, duftend und wunderschön zweifarbig.

The two most common causes are rolling the doughs to different sizes and rolling up too tightly. Roll both rectangles to the same dimensions and stack them gently, then roll up loosely so the layers stay distinct rather than compressing into one mass. Also make sure the two slits from the center stop short of the edge - cutting all the way through lets the strips unravel in the oven.
