Preparazione

    Intiepidite il latte e scioglietevi il lievito e lo zucchero. Lasciate riposare circa 10 minuti, finché non si forma una leggera schiuma.

    In una ciotola capiente unite la farina, il sale, la vaniglia, l'uovo, il burro e il composto con il lievito. Impastate per circa 8-10 minuti, fino a ottenere un impasto liscio e morbido.

    Dividete l'impasto in due parti uguali (pesatele per maggiore precisione). Incorporate il cacao (e 1 tsp di latte, se necessario) in una delle due metà, fino a ottenere un colore scuro e uniforme.

    Mettete i due impasti in ciotole separate, copriteli e lasciateli lievitare per circa 1 ora, o finché non raddoppiano di volume.

    Stendete l'impasto alla vaniglia su un piano leggermente infarinato formando un rettangolo (circa 25 × 30 cm / 10 × 12 in). Stendete l'impasto al cioccolato della stessa dimensione e adagiatelo delicatamente su quello alla vaniglia. Premete leggermente e passate ancora una volta il matterello per far aderire bene i due strati.

    Tagliate l'impasto per il lungo in strisce larghe circa 5 cm (2 in). Praticate due piccoli tagli dal centro verso l'esterno (senza arrivare fino in fondo!) e arrotolate delicatamente, in modo che il motivo a strati resti ben visibile.

    Disponete le brioches su una teglia foderata con carta forno, copritele e lasciatele riposare altri 20-30 minuti.

    Spennellate leggermente con il latte.

    Cuocete in forno preriscaldato a 180 °C / 350 °F (statico) per 15-18 minuti, finché non risultano dorate.

    Appena sfornate spennellatele con burro morbido, lasciatele raffreddare completamente e spolverizzatele generosamente con zucchero a velo. Soffici, profumate e con un bellissimo effetto bicolore.
