    Setacciare la farina in una ciotola e formare una fontana al centro. Unire il lievito secco, un po' di zucchero e una parte del latte tiepido. Lasciare attivare qualche minuto, finché non si forma una leggera schiuma.

    Aggiungere i restanti ingredienti e impastare fino a ottenere un impasto liscio e morbido. Coprire e lasciare lievitare per 60-90 minuti, finché non è ben raddoppiato.

    Stemperare l'amido di mais nell'acqua fino a ottenere un composto liscio. Scaldarlo insieme alla confettura di lamponi finché non si addensa leggermente e risulta ben amalgamato. Coprire a contatto con pellicola e lasciare raffreddare completamente.

    Stendere l'impasto in un rettangolo e distribuire uniformemente sopra il ripieno di lamponi ormai freddo.

    Arrotolare stretto partendo dal lato lungo.

    Tagliare il rotolo per il lungo a metà, ottenendo due lunghi filoni. Tenere il lato tagliato rivolto verso l'alto.

    Attorcigliare delicatamente i due filoni tra loro e adagiarli nello stampo da plumcake già preparato.
