    Préchauffez le four à 190°C (375°F).

    Découpez des anneaux dans la pâte feuilletée. La taille des anneaux est à ajuster selon vos envies. Dans la moitié des anneaux, découpez un trou plus petit au centre. Humidifiez légèrement les anneaux entiers avec un peu d'eau pour qu'ils adhèrent mieux, posez dessus les anneaux évidés et appuyez légèrement. Disposez sur une plaque recouverte de papier cuisson.

    Dorez au mélange jaune d'œuf-lait et enfournez environ 20 minutes, jusqu'à ce que les feuilletés soient bien dorés. Sortez-les du four et laissez refroidir complètement.

    Faites chauffer le lait dans une casserole. Dans un saladier, délayez un peu de lait avec les jaunes d'œufs, le sucre, la maïzena et le sel. Versez lentement le lait chaud sur le mélange aux œufs sans cesser de remuer. Reversez le tout dans la casserole et faites épaissir à feu moyen, en remuant sans arrêt. Ajoutez l'extrait de vanille et incorporez le beurre. Couvrez et laissez refroidir complètement.

    Garnissez les feuilletés refroidis de crème à la vanille et déposez les mandarines par-dessus.
