Dans une casserole, faites-les cuire à feu moyen avec le sucre, le jus de citron, l'eau et quelques pépins de pomme pendant environ 10-12 minutes, jusqu'à ce qu'elles soient tendres et légèrement compotées. Écrasez-les grossièrement à la fourchette (sans les réduire en purée). Retirez du feu, ôtez les pépins et laissez la compote refroidir complètement.

    Dans un saladier, travaillez le beurre avec le sucre, la vanille et le sel jusqu'à obtenir une texture crémeuse. Ajoutez le jaune d'œuf et mélangez brièvement. Incorporez la farine et la poudre d'amandes, puis pétrissez jusqu'à obtenir une pâte souple et homogène. Laissez reposer au frais 20-30 minutes.
