    Préchauffez le four à 180°C (350°F), chaleur voûte et sole. Recouvrez une plaque de papier cuisson.

    Étalez la pâte feuilletée et découpez-la en 15-16 carrés (d'environ 8-9 cm / 3-3½ inches de côté).

    Incisez chaque coin en direction du centre sans aller jusqu'au bout.

    Égouttez très soigneusement les mandarines en conserve, puis épongez-les délicatement avec du papier absorbant.

    Mélangez le fromage blanc ou le fromage frais nature non salé, le sucre, la vanille, la fécule de maïs et les mandarines finement coupées jusqu'à obtenir une préparation lisse.

    Déposez environ 1 tbsp de garniture au centre de chaque carré de pâte.

    Rabattez les quatre coins vers le centre et pressez-les légèrement pour les souder.

    Dorez au mélange jaune d'œuf-lait.

    Parsemez d'amandes effilées le centre et légèrement les bords, puis posez un quartier de mandarine sur chaque pochette.

Because of the quark filling they belong in the fridge, loosely covered rather than in an airtight box, which would trap steam and soften the pastry. They taste best on the day they are baked. To bring back the crispness, warm them in the oven for a few minutes at the same 180°C (350°F) and dust with powdered sugar afterwards, not before.
