    Mescolare la farina, lo zucchero a velo, le mandorle tritate, il sale e la vaniglia. Unire il burro freddo e impastare rapidamente fino a ottenere un impasto liscio. Importante: lavorare velocemente, così l'impasto non si scalda.

    Formare con l'impasto un filoncino lungo, avvolgerlo bene nella pellicola e mettere in frigorifero per circa 60 minuti.

    Preriscaldare il forno a 170 °C / 338 °F (statico). Rivestire una teglia con carta da forno.

    Tagliare il filoncino freddo a fettine di circa 1.5 cm di spessore (circa 20 g ciascuna). Arrotolare ogni pezzo formando prima una pallina, poi un cilindretto, e piegare delicatamente le estremità verso il basso per ottenere le classiche mezzelune.

    Se durante la lavorazione l'impasto diventa troppo morbido, rimettere le mezzelune già formate in frigorifero per 15-20 minuti: manterranno meglio la forma in cottura.

    Sfornare, lasciar intiepidire e, ancora tiepidi (ma non caldi), passarli delicatamente nello zucchero a velo con lo zucchero vanigliato oppure spolverarli leggermente.
