Brioches Marbrées

Brioche suave y esponjosa en dos capas: una de vainilla y otra de chocolate intenso. Tierna, mantecosa y sencillamente irresistible.

    Templa la leche y disuelve en ella la levadura y el azúcar. Deja reposar unos 10 minutos, hasta que haga una ligera espuma.

    En un bol grande, mezcla la harina, la sal, la vainilla, el huevo, la mantequilla y la mezcla de levadura. Amasa unos 8-10 minutos, hasta obtener una masa lisa y suave.

    Divide la masa en dos partes iguales (pésalas para que sean exactas). Incorpora el cacao (y 1 tsp de leche, si hace falta) a una de las mitades amasando hasta que quede de un color oscuro uniforme.

    Coloca cada masa en un bol aparte, tápalas y déjalas levar alrededor de 1 hora, hasta que dupliquen su volumen.

    Estira la masa de vainilla sobre la encimera ligeramente enharinada formando un rectángulo (de unos 25 × 30 cm / 10 × 12 in). Estira la masa de chocolate del mismo tamaño y colócala con cuidado sobre la de vainilla. Presiona ligeramente y pasa el rodillo una vez más para que las dos capas queden bien unidas.

    Corta la masa a lo largo en tiras de unos 5 cm (2 in) de ancho. Haz dos cortes pequeños desde el centro hacia fuera (¡sin llegar a cortar del todo!) y enrolla con suavidad para que se siga viendo el dibujo de las capas.

    Coloca las brioches en una bandeja de horno forrada con papel de hornear, tápalas y déjalas reposar otros 20-30 minutos.

    Pincela con un poco de leche.

    Hornea en el horno precalentado a 180 °C / 350 °F (calor arriba y abajo) durante 15-18 minutos, hasta que estén doradas.

    Al salir del horno, pincélalas con mantequilla blanda, déjalas enfriar por completo y espolvorea generosamente con azúcar glas. Suaves, aromáticas y con dos preciosos tonos.
