    Муку просейте в миску, сделайте углубление, добавьте дрожжи, немного сахара и часть молока. Оставьте на 5-10 мин, пока не появится пенная шапочка. Влейте оставшееся молоко, всыпьте сахар и соль, добавьте половину яйца и вымесите. В конце вмешайте масло и вымешивайте до гладкости (8-10 мин). Накройте и оставьте подходить на 1 ч, пока тесто не увеличится вдвое.

    Для крема в сотейнике венчиком смешайте молоко, сахар, крахмал, желтки и ваниль. Доведите до кипения, постоянно помешивая, пока крем не загустеет. Снимите с огня, накройте пищевой плёнкой встык, дайте остыть и переложите в кондитерский мешок.

    Тесто разделите на 8 шариков, каждый раскатайте в прямоугольник. По длинной стороне отсадите полоску крема и выложите 4-5 ягод черники. Заверните и защипните край. С другой стороны сделайте 5-6 надрезов, сверните рулетом и соедините концы в кольцо, плотно прижав.

    Выложите кольца на противень, накройте и оставьте на расстойку 15-20 мин. Смажьте желтком и выпекайте при 180 °C / 350 °F (верх/низ) 20-25 мин до румяности. Остудите на решётке и посыпьте сахарной пудрой. Из остатков крема получится отличный десерт в стакане со свежими ягодами. Кольца с черникой и заварным кремом готовы: румяные снаружи, нежные внутри, с фруктовым сюрпризом.

Whisk it smooth again before piping, as it stiffens in the fridge. You can also shape the rings and let them do their 15-20 minute rest while the oven preheats to 180 °C / 350 °F.

The most common cause is too much custard or piping it too close to the edge - keep the line along the long side with a clear border so the fold can be pressed shut firmly. Press the seam well and make sure the 5-6 slits are cut only into the opposite side, not through the filled seam. Overfilled rings also burst because steam from the blueberries needs somewhere to escape.
