    Scaldare il forno a 200°C (390°F) statico oppure 180°C (355°F) ventilato. Foderare una teglia con carta da forno.

    Spolverizzare il piano di lavoro con un po' di zucchero e stendervi sopra la pasta sfoglia. Cospargere abbondantemente di zucchero anche la superficie. (Facoltativo: unire allo zucchero la cannella o lo zucchero vanigliato.)

    Prima piega: ripiegare il lato destro e quello sinistro verso il centro. Premere leggermente e spolverizzare con un po' di zucchero.

    Seconda piega: ripiegare di nuovo entrambi i lati verso il centro e cospargere ancora di zucchero.

    Piega finale: chiudere i due lati lunghi uno sull'altro formando un rotolo allungato. Far riposare in frigorifero per 15-20 minuti, così sarà più facile tagliarlo.

Coarse or raw sugar stays grainy and can leave hard, sandy spots, while powdered sugar melts too fast and burns before the pastry is golden. If you only have granulated sugar, pulse it briefly in a blender to get closer to a fine texture.
