Girelle alla crema di vaniglia

Preparazione

    Setaccia la farina in una ciotola e forma una fontana. Aggiungi il lievito, 1 tsp di zucchero e un po' di latte tiepido. Lascia riposare 8-10 minuti, finché non si forma la schiuma.

    Unisci lo zucchero rimasto, l'uovo, il latte, il sale e la vaniglia. Impasta fino a ottenere un impasto liscio, poi incorpora il burro e lavora ancora 8-10 minuti, finché l'impasto risulta morbido, elastico e leggermente lucido.

    Copri e lascia lievitare per 60-90 minuti, fino al raddoppio.

    Dividi l'impasto in circa 10 pezzi (da 50 g), forma delle palline, stendi ognuna in un disco e segna leggermente il centro con un coppapasta piccolo.

    Taglia la parte esterna a striscioline sottili, lasciando il centro intatto.

    Con la sac à poche forma al centro un anello basso di crema alla vaniglia, poi ripiega delicatamente le striscioline verso il centro, sovrapponendole leggermente.

    Metti un mirtillo al centro, copri e lascia riposare 20-30 minuti.

    Sbatti il tuorlo con il latte, spennella le girelle e inforna a 180 °C / 350 °F per 18-22 minuti, finché non sono dorate. Lascia intiepidire e spolvera con zucchero a velo. Soffici brioche delicate con una fine farcia alla vaniglia: leggere, eleganti e semplicemente irresistibili.
