Préparation

    Tamisez la farine dans un saladier et creusez un puits au centre. Ajoutez-y la levure, 1 tsp du sucre et un peu de lait tiède. Laissez reposer environ 8-10 minutes, jusqu'à ce que la levure mousse.

    Ajoutez le reste du sucre, l'œuf, le reste du lait, le sel et la vanille. Pétrissez jusqu'à obtenir une pâte lisse. Incorporez le beurre petit à petit et continuez à pétrir 8-10 minutes, jusqu'à ce que la pâte soit souple, élastique et légèrement brillante.

    Couvrez et laissez pousser la pâte 60-90 minutes, jusqu'à ce qu'elle ait nettement doublé de volume.

    Divisez la pâte en 3 pâtons de taille égale. Étalez chaque pâton en un disque d'environ 22 cm (9 inches) de diamètre.

    Marquez légèrement le centre à l'aide d'un emporte-pièce rond ou d'un verre (sans couper la pâte). Découpez la pâte en 16 bandes égales, en vous arrêtant au cercle marqué au centre.

    Prenez deux bandes voisines, torsadez l'une vers la droite et l'autre vers la gauche en faisant environ deux tours, puis soudez les extrémités en les pinçant. Répétez tout autour pour former une grande étoile.

    Couvrez sans serrer et laissez pousser l'étoile briochée encore 20-30 minutes.

    Battez le jaune d'œuf avec le lait et dorez délicatement la brioche au pinceau.

    Enfournez dans un four préchauffé à 180 °C / 350 °F (chaleur traditionnelle) pendant environ 20-25 minutes, jusqu'à ce que la brioche soit bien dorée (le temps de cuisson peut varier selon les fours).

You can let the dough do its first rise slowly in the fridge overnight instead of the 60-90 minutes at room temperature, then bring it back to room temperature before rolling. Chilled dough is actually easier to roll into the three 22 cm circles and to twist neatly. Do the shaping, the 20-30 minute second rise, and the egg-yolk-and-milk brushing on the day you bake.

The two big ones are cutting all the way through the middle and skipping the final rise. Mark the center with a cutter or glass only as a guide and stop every one of the 16 cuts at that mark, otherwise the star falls apart into separate strips. Also pinch each twisted pair firmly at the tips - untwisted or loosely sealed ends open up in the oven and the jam runs out.
