Tartaletas de manzana y crema pastelera

Preparación

    Pela la manzana, retira el corazón y córtala en dados pequeños. Mézclala con el zumo de limón, el azúcar, la canela y la maicena.

    Saltéala brevemente en una sartén a fuego medio hasta que esté apenas tierna. Escúrrela bien y déjala enfriar. Crema pastelera

    Calienta 200 ml de la leche con el extracto de vainilla.

    En un bol aparte, bate la yema, el azúcar, la maicena y los 50 ml de leche restantes.

    Añade poco a poco la leche caliente a la mezcla de huevo sin dejar de batir, devuélvela al cazo y cuécela hasta que espese.

    Incorpora la mantequilla, cubre con film transparente a piel (en contacto con la superficie) y deja enfriar por completo. Masa quebrada

    Amasa rápidamente la mantequilla, el azúcar glas, el azúcar avainillado, la sal, la yema y el yogur, solo hasta que se integren.

    Añade la harina y amasa hasta obtener una masa lisa. Refrigérala unos 30 minutos.

    Estira la masa con un grosor de unos 3-4 mm. Corta círculos (de unos 10 cm Ø) con cortadores rizados para tartaletas.
