    Precalienta el horno a 350°F (175°C) y forra una bandeja con papel de hornear.

    En un bol, bate la mantequilla con el azúcar glas y el extracto de vainilla hasta obtener una crema.

    Incorpora la yema de huevo y añade después la avellana molida, la harina, la levadura y la sal. Amasa hasta conseguir una masa blanda y lisa.

    Forma bolitas (del tamaño de una nuez) y colócalas en la bandeja. (Opcional: para que queden más dulces, rebózalas ligeramente en azúcar glas antes de colocarlas)

    Hunde suavemente una avellana entera en el centro de cada galleta.

    Hornea unos 13-15 minutos, hasta que se agrieten un poco pero sigan pálidas.
