    Mélanger la farine, le sucre glace, la poudre d'amandes, le sel et la vanille. Ajouter le beurre froid et pétrir rapidement jusqu'à obtenir une pâte homogène. Important : travailler vite pour que la pâte ne se réchauffe pas.

    Former un long boudin avec la pâte, l'envelopper bien serré dans du film alimentaire et le placer au réfrigérateur environ 60 minutes.

    Préchauffer le four à 170 °C / 338 °F (chaleur traditionnelle). Recouvrir une plaque de papier cuisson.

    Détailler le boudin de pâte froide en tronçons d'environ 1.5 cm d'épaisseur (environ 20 g chacun). Rouler chaque morceau en boule, puis en petit boudin, et recourber délicatement les extrémités vers le bas pour former les croissants classiques.

    Si la pâte devient trop molle pendant le façonnage, remettre les croissants au frais 15-20 minutes : ils garderont mieux leur forme à la cuisson.

    Enfourner 12-15 minutes. Les biscuits doivent rester bien pâles, tout juste colorés aux pointes.

    Sortir du four, laisser tiédir légèrement puis, encore tièdes (mais plus brûlants), les rouler délicatement dans le mélange de sucre glace et de sucre vanillé, ou simplement les saupoudrer.
